May is here and we’re counting down to this year’s National Restaurant Association’s 2025 Restaurant Show. From May 17 to 20, food service processionals will converge in Chicago to network, explore emerging trends, and explore the best the industry has to offer.

If you’re attending this year’s show, there are a lot of exciting things to keep an eye out for. From new tools and technology to talks from industry insiders, here’s what to keep an eye out for as you explore the expo floor and attend sessions:

  • Data-driven dining: Capturing and utilizing guest data is one key way to improve experiences and increase revenue. On the topic of data, look for discussions of AI and predictive analytics for optimizing inventory, staffing and more, as well as for applications of guest data toward personalized experiences, loyalty systems and promotions.
  • Strategic tech adoption: In a rapidly changing industry, adaptability is the name of the game. When it comes to adding and sunsetting tech in your restaurant, deciding what tech is necessary can be a big decision, as can the decision between buying existing solutions and building custom technology.
  • AI-powered operations: AI has been a buzzword lately, across the restaurant and on a larger scale, and it’s not going away any time soon. If you’re curious about what AI advancements mean for your restaurant, explore innovations such as predictive prep, voice-enabled ordering, kitchen operation and more to understand what’s possible for your restaurant.
  • Operational efficiency: For restaurants, longevity is the name of the game; long-term survival and success means staying vigilant for ways to streamline or expand your restaurant’s operations. From reduced consumer spending to rising food costs, we anticipate that many show attendees will have improving operations on their mind.
  • Industry-wide challenges: The restaurant industry is full of unique challenges, and times of economic uncertainty can pose additional difficulty. To understand how best to weather current challenges, like the notable closures and bankruptcy filings facing today’s industry, look for resources on streamlining operations, retaining customers and boosting profits.

How retailers should split workloads between cloud and edge for real-time store operations
What should run in the cloud, and what should run in the store? Match each workload to the environment it was built for. Real-time work belongs at the edge. That means POS transactions, shrink detection, video recognition and in-store promotions. These process locally and keep running even when connectivity drops. Use the cloud for the rest: offline data analysis, AI model training, big-data processing and eCommerce. So the answer is not “Cloud Out” or “Edge In.” It is both, built as one hybrid architecture.
